Te Mōrehu is a washed rind cow’s milk cheese that is matured and ready to eat at two months. Typically available after 2/4 months the cheese is also aged up to 14 months. The washing of the rind attracts the native flora giving a smell/flavor of smoked bacon and sometimes an oyster/scallop or nutty profile. The centre of the cheese is semi hard, ripening from the outside in to a sometimes slightly crumbly center. Slightly sour in the centre with a creamy savoury outer centre, which is carried by the salt.
Also an exceptional melting cheese very good alternative to a Raclette.
The size of the cheese varies around 1kg and comes in a brick shape 90mm by 70mm and 190mm long.
